Eliminating Carbs & Sugar - Day 3

I've been on the Phase 1 of the South Beach for 2 whole days (going on 3 days today).
[woot-woot]

I must say, so far so good.
This time around isn't too bad - def not as bad as the first time I did this phase.

Remember, the purpose for myself is to try and eliminate/detox from carbs and white sugar.  I want to try and blog what I eat as a way of holding me accountable.


Here's what I've had to eat each day so far:

Monday:
Breakfast
2 hard boiled eggs
16 oz non-fat, sugar-free vanilla latte

Lunch
6 slices of thinly sliced roast beef
1/4 pickle spear (dill)
1 Tbs cream cheese
Colby jack cheese square (I have a huge cheese fetish)

Snack
2 sugar-free butterscotch discs
1 mozzarella string cheese

Dinner
Rotisserie Chicken from Costco (slices picked off the breast)
Steamed broccoli
6 oz Diet Coke

Snack
Spoonful of crunchy peanut butter
1 sugar-free fudgsicle.

Water consumed
62 ounces (with lemon wedges)

Tuesday:
Breakfast
2 hard boiled eggs
2 slices of Canadian bacon
16 oz non-fat, sugar-free vanilla latte

Lunch
Spinach lettuce mix
Ground beef seasoned with taco seasoning (low sodium)
Mexican cheese
Sliced olives
Black beans
1/2 sliced avocado
6 oz Diet Coke

Snack
1 mozzarella string cheese
16 oz non-fat, sugar-free almond latte
[I had to...today was an extra needed latte day...and it was $2 Tuesday]

Dinner
Baked chicken tenderloins (3)
Steamed green beans
Zucchini cheese balls (a new recipe in the house- pretty tasty for zucchini)

Snack
Spoonful of crunchy peanut butter

Water consumed
46 ounces (with lemon wedges)

I will confess...I did have a little oopsie Monday.  My little one was given a Tootsie roll (the smallest rolls on the market...smaller than the midgees) on our way out of the doctors office at her check up appointment.  I don't let her have the whole thing yet as she's too little, so I took a bite off of it and gave her 1/2. It wasn't until I was halfway home what i had realized I had done.

Oops. Doesn't hurt once in awhile.

Whew, there you have it.  A look at my phase 1 of the South Beach so far.

I wish I was more adventurous with food because I get bored eating the same things, but it's only 2 weeks until I move on to either Phase 2 of the South Beach Diet or the 21 Day Fix...I haven't decided that one yet.

I did weigh myself yesterday morning before eating breakfast.
171 lbs.
[The heaviest I've ever been - *gulp*]
This has been hard for me to accept the last few years, but it's time I change that.

Things are a little easier when you have the mind set that you want to make a healthy lifestyle change.


Has any one tried Phase 1 of the South Beach Diet?  What have been your experiences? What have been some of your favorite go-to foods/meals?

*I am not a dietician or a doctor.  T am simply going off of what has worked for myself in the past and my own research I've completed online.

  1. This looks great! I really need to get better about eliminating sugar. It is in SO many unnecessary foods.

    1. It really is true-there are so many foods with unnecessary amounts of sugar. My worst offender is readily available carbs. There is something to be said about how you feel getting off of all the unnecessary sugar though. Happy Wednesday!

  2. I need to be better too. Sugar and carbs are my problem for sure. I just wish I could eat dairy.. it's so hard to do carb-free when you can't have cheese for protein. I get really tired of meat/veggies constantly. Ugh.
